Ingredients
1 lb large shrimps
1 lb sea scallops
1 lb salmon, cut into 1–1.5 inch cubes
Squids
1 red bell pepper, cut into chunks
1 red onion, cut into wedges
6 tbsp unsalted butter
4 tbsp soy sauce
5 tsp fresh lime juice
2 tsp grated ginger
4 cloves garlic, minced
3 tbsp sugar (or honey)
2 scallions, sliced
Directions

1. Make the marinade

In a small saucepan over medium-low heat, melt butter.

Stir in soy sauce, lime juice, ginger, garlic, and sugar.

Simmer gently for 2–3 minutes until combined, add scallions.

Let cool completely before using.

2. Marinate everything

Place shrimp, scallops, squids and salmon.

Cover and refrigerate for 30 minutes

(Don’t marinate seafood too long or scallops/salmon can break down.)

3. Assemble skewers

If using wooden skewers, soak in water for 30 minutes.

Thread ingredients alternating for even cooking:

shrimp, squid, scallop, salmon cube, pepper, red onion

Repeat pattern, leaving a little space between pieces.

4. Grill

Preheat grill to medium-high and oil grates well.

Grill skewers for about 4-5 minutes per side

Turn carefully once to avoid breaking fish.

Cook until seafood is opaque and lightly charred, vegetables softened.

5. Finish & serve

Optional: brush lightly with warmed leftover marinade while grilling (do not reuse raw marinade unless boiled).

Serve hot with rice, noodles, or a fresh salad.
