Ingredients
Chicken thighs
1L fresh coconut water
Fresh coconut meat, to taste
4-5 dried red dates
1 tbsp goji berries
1 ginger
Salt
2 tbsp light soy sauce
1 lime
1-2 Thai chillies
Directions
  1. Prepare the Ingredients - Cut the chicken into bite-sized pieces. Slice the ginger and remove the pits from the red dates. 
  2. Prepare the Coconut Broth - Pour the coconut water into a pot. Add 4-5 ginger slices, red dates and coconut meat. Bring to a gentle simmer over medium heat.
  3. Add the Chicken - Add the chicken and simmer over medium-low heat for 10–15 minutes, or until the chicken is fully cooked. 
  4. Add the Goji Berries - Add the goji berries and cook for another 2–3 minutes. Season with salt to taste. 
  5. Serve and Enjoy - Your light and flavourful coconut chicken is ready! Serve hot and enjoy the naturally sweet coconut broth with tender, juicy chicken. 


🥣Coconut Chicken Dipping Sauce

Ingredients

  • 2 tbsp soy sauce
  • 1 tbsp finely chopped ginger 
  • Juice of 1 small lime
  • 1–2 Thai chillies, finely sliced 

Directions

  1. Mix all the ingredients together and serve. The tangy and spicy dipping sauce pairs perfectly with coconut chicken! 🌶️🍋
