Mango Pomelo Sago

Ingredients
1 cup pomelo pulp
2 ripe mangoes
1/3 cup evaporated milk
½ cup sago pearls
½ cup coconut milk
¼ cup sugar, or more to taste
pinch of salt
1 additional mango, peeled and cut into cubes
1/3 cup water
3 ½ cups water, for boiling
Directions
- Bring 4 cups water to a boil, add sago, and simmer 10 min. Turn off heat, cover, and let sit 15 min until pearls turn translucent. Drain and rinse under cold water.
- Blend 2 mangoes with evaporated milk and ½ cup water until smooth.
- In a small pot, simmer coconut milk, sugar, and salt on low until sugar dissolves. Cool to room temperature.
- Combine mango puree, cooked sago, and coconut mixture in a large bowl. Stir well and chill 2 hours.
- Peel pomelo and separate pulp into small chunks. Dice remaining mango for topping.
- Spoon chilled dessert into bowls, top with mango cubes and pomelo, then serve cold.
