


Thai Peanut Chicken Satay

1. Marinate the chicken. Combine chicken, garlic, lemon juice (save 1 tsp for peanut sauce), curry powder, and salt. Toss to coat and let sit for at least 20 minutes.
2. Make the peanut sauce. Whisk together peanut butter, soy sauce, brown sugar, 1 tsp lemon juice, ginger, coconut milk, and Sriracha until smooth.
3. Skewer and cook. Thread chicken onto skewers. Grill or pan sear over medium heat for 10–15 minutes until cooked through.
4. Serve. Drizzle or dip in peanut sauce and garnish with chopped peanuts.
