


Spicy Ribeye Beef Noodle Soup

1. In a large pot, combine beef broth, soy sauce, sugar, chili bean paste, garlic, and ginger. Bring to a boil, then reduce to a simmer and cook for 15–20 minutes to develop flavor.
2. Meanwhile, cook noodles according to package instructions. Drain and set aside.
3. Quickly blanch greens in boiling water for 30–60 seconds until just tender. Drain and set aside.
4. Return broth to a gentle simmer. Add sliced ribeye and cook for 30–60 seconds, just until no longer pink.
5. To serve, divide noodles and greens into bowls. Pour over hot broth and ribeye, then finish with optional garnishes.
