Grilled Spot Prawns with Vietnamese Crack Sauce

Ingredients
2 lbs spot prawns
1-2 Thai chilies
1 tbsp shallots
Handful of cilantro
1 ½ tbsp fish sauce
2 tbsp brown sugar
Juice of ½ a lime
Directions
- In a mortar and pestle, pound together garlic cloves, Thai chilies, shallots and cilantro. Then add fish sauce, brown sugar, and lime juice and mix through.
- Butterfly the spot prawns, shell-on, and lightly brush with fish sauce before grilling for extra smokiness and char.
- Grill over high heat until just cooked through (about 2 minutes).
- Spoon your crack sauce over the hot grilled prawns and serve immediately.
